EASY ZUCCHINI QUICHE

Easy Zucchini Quiche

INGREDIENTS:
3 cups sliced zucchini
½ cup onion
3 eggs
½ teaspoon sea salt
½ cup grated x-sharp cheese
½ teaspoon oregano
1/3 cup canola oil
1 cup Gluten-free baking mix

DIRECTIONS:
Mix all ingredients together. Spray pan with non-stick baking spray.
Bake 350 in 13” x 9” pan for 30 minutes or until golden brown.

Almond Bread

Almond Bread

INGREDIENTS:
4 eggs
1 cup sugar
1 cup brown rice flour
1 cup tapioca flour
1 cup sorghum flour
1 teaspoon xanthan gum
3/4 cup oil
½ cup sliced almonds
½ teaspoon vanilla
1 teaspoon almond extract

DIRECTIONS:
Combine flours and xanthan gum. Mix in eggs, sugar, and 1 cup flour. Add oil and 2 cups flour. Add remaining ingredients. Pour into baking pan coated with cooking spray.

Bake 350° for 30-40 minutes.
