Oatmeal Crackers

INGREDIENTS:
½ cup tapioca flour
½ cup brown rice flour
1/3 cup oat flour
1 teaspoon xanthan gum
2 cups rolled oats
1 teaspoon sea salt
2 tablespoons honey
½ cup butter
½ cup boiling water

DIRECTIONS:
Combine dry ingredients in mixing bowl. Separately, cover butter with boiling water. Stir liquid and honey into dry ingredients. Mix well. Add more flour, if dough is too sticky. Roll very thin. Cut like crackers. (For thicker, softer bread, press firmly into 9×13 pan). Pierce with fork.

Bake 350 for 14 minutes or until lightly browned.

Almond Bread

Almond Bread

INGREDIENTS:
4 eggs
1 cup sugar
1 cup brown rice flour
1 cup tapioca flour
1 cup sorghum flour
1 teaspoon xanthan gum
3/4 cup oil
½ cup sliced almonds
½ teaspoon vanilla
1 teaspoon almond extract

DIRECTIONS:
Combine flours and xanthan gum. Mix in eggs, sugar, and 1 cup flour. Add oil and 2 cups flour. Add remaining ingredients. Pour into baking pan coated with cooking spray.

Bake 350° for 30-40 minutes.
